Dried Oyster mushrooms

Introduction

At Petrichor Foods EU, we complement our dried fruit portfolio with premium dried oyster mushrooms, valued for their mild flavor, high protein content, and versatility in both traditional and modern cuisine.

History and Distribution

Oyster mushrooms (Pleurotus ostreatus) are widely cultivated worldwide and are among the most sustainable mushrooms due to their ability to grow on agricultural waste such as straw, corn husks, and coffee grounds. Native to Europe and Asia, they have now spread to all continents.

Cultivation

Oyster mushrooms are relatively fast-growing. They thrive on pasteurized straw or sawdust substrate, producing harvests in as little as 4–6 weeks. They are considered an environmentally friendly crop thanks to low input requirements and rapid turnover.

Harvest

The mushrooms are harvested when the caps are 5–15 cm wide, firm, and still slightly curved at the edges. They are usually cut in clusters by hand, ensuring minimal damage.

Processing

Fresh oyster mushrooms are cleaned, trimmed, and dried using hot-air dehydrators to preserve their delicate flavor and texture. The drying process reduces their moisture content to around 10–12%, making them suitable for long-term storage and export.

  • Carbohydrates: 60 g
  • Fiber: 11 g

Grading

Dried oyster mushrooms are typically graded by:

  • Size of caps (whole vs. broken pieces)
  • Color (light vs. darker brown)
  • Cleanliness and uniformity

Whole, intact caps are premium grade; broken pieces are often used in industrial or foodservice applications.
